The Spicy and Crunchy Kanda Vada:

Kanda Vada or Yam Doughnut is a  deep-fried Indian snack. It is enjoyed in the Monsoon season. A usual type of vada or pakoda (Hindi for vada), Kanda vada uses Elephant foot Yam. Many say that they taste better than the normal potato or onion vada.

What is Elephant Foot Yam?

Elephant Foot Yam or Zimikand is a huge potato lookalike vegetable. It is cultivated  in South Africa and South Asia. It called Kanda in Telugu.It is the least favourite among children. But once, marinated and deep-fried, it is surely a treat. It bears the name elephant foot yam because of its looks.

In Northern India, it is compulsory to eat Zimikand curry on Diwali. In South Africa, different tribes have different methods of growing yam. The tribe which grows the biggest one gets to rule that area.

 

Vadais from South India are popular across India. Famous vada recipes are thayir vada (dahi vada), medu vada, sambhar vada or the simple vada served with chutney. Nobody can resist them.

Vada in South India is similar to Pakodas in North India. Both of them are rainy season dishes. Pakodas can be eaten with chutney or sauce and vada taste great with any curry or chutney.

This recipe for Kanda vada makes vadas in Andhra style, crunchy and spicy. Cut the yam into small pieces. Add spices like jeera (cumin seeds), red chillies, green chillies, turmeric and salt to taste. Blend them together. Add rice flour to make a thick paste. Make round balls of the mixture. Heat the oil and add the balls one by one. Deep fry and put it on a tissue paper to remove excess oil.

Note: Make sure that you clean the yam many times before boiling it.

Hot and fresh Kanda vada is ready.

Serve it with coriander chutney or tomato ketchup and a cup of tea.

Preparation Steps of Kanda Vada Yam Doughnut Spicy Crunchy Savoury Snack


Method:

  • Remove the layer of kanda & cut into small pieces
  • Take a mixie jar & add red chilly, zera, turmeric powder, salt & grind it slightly
  • In the above, add kanda pieces, green chilly, curry leaves, coriander leaves & grind it as rough paste
  • Mix this rough paste with rice flour thoroughly & make into lemon size balls
  • Now take a pan & place it on stove
  • Add oil & heat it
  • Then wet your hands with water & take each ball in one hand & press it as round pappu vada with another hand & put it in oil
  • Fry it as crispy
  • Now place a tissue paper in a plate & put the fried crispy vadas in this plate
  • Tasty, spicy & yummy kanda vadas are ready.

**This can be taken with hot rice or as snacks.
