Brudet, brodet or brodeto is a fish stew made in Croatian regions of Dalmatia, Kvarner and Istria, as well as along the coast of Montenegro. It consists of several types of fish, and the most important aspect of brudet is its simplicity of preparation and the fact that it is always prepared in a single pot. It is usually served with polenta which soaks up the fish broth, while other recipes serve it with potatoes or bread. A similar dish from Corfu is known as Bourdeto.
This is without a doubt, a one-pot dish. This means that the brodetto is a very simple stew to prepare on busy days and nights. It does not compromise on the flavour if you happen to prepare a lot for a large serving. Therefore, it is safe to say that this seafood (or fish) stew is rather best when you prepare it in bulk. Preparation Steps of Brodetto – Croatian Fish Stew


  1. Heat the olive oil in a large saucepan, Dutch oven, or preferably a clay pot over medium heat.
  2. Add the onion, garlic, carrot, celery, bay leaves, parsley, and red pepper flakes.
  3. Cook and stir until the onion has softened and turned translucent about 5 minutes.
  4. Stir in the mashed tomatoes and cook for 15 minutes over medium heat.
  5. Add the fish.
  6. Pour in the vinegar or wine.
  7. Cook until the liquid has almost evaporated, about 10 minutes.
  8. Pour in the fish stock.
  9. Cover, reduce the heat to low and simmer for 10 minutes.
  10. Gently mix in the clams. Cook until clams have opened (discard any that don't open) about 2 minutes, and then stir in the shrimp. Cook until the shrimp are pink, about 3 minutes.
  11. Place a slice of toasted bread in the bottom of each bowl.
  12. Ladle brodetto over the bread and serve immediately.
