BANDAR LADDU:

Bandar laddu or Besan laddu is a very popular Indian dessert. Besan laddus are basically sweet balls of roasted gram-flour, topped with almonds or silver leaf (edible) and cardamom. The recipe for Bandar laddu we have here is made in Andhra style. The laddus in this recipe are prepared in a unique style. These laddus are crunchy and melt in your mouth.

Origin of laddu:

The origin of laddu is traced to Bihar, India. It is believed that Susruta, in 4BC, made small balls of jaggery and sesame seeds for medicinal purposes. Over the years these small balls upgraded to a super famous Indian dessert.

They are often served at family functions, festivals and religious occasions. In famous temples like Tirupati Balaji, laddus are given as prasadam because they have a longer shelf life.  Furthermore, these make a good snack for hostellers.

There are many varieties of laddu. In India, we have til laddu(sesame), motichoor laddu,(another besan delicacy), atta laddu, Gond ke laddu, besan laddu  Thaggu ke laddu (Laddoo made by a cheat)etc. No celebration in India is complete without a box of laddu.

Bandar laddus or Thokkudu laddu are from Andhra Pradesh. The method of preparation of these laddus is very unique. Instead of roasting besan and mixing ghee, make murukus (south Indian snacks) with the batter. Ground these murukus to make a fine powder. Add sugar to taste. Mix ghee and make small sweet balls.

You can add elaichi(cardamom) powder, dry fruits or saffron to the laddus. Remember to garnish the laddus with badam(almonds) or pistachios(pista).

You can munch on these laddus at any time of the day. You can also serve them with tea.

Preparation Steps of BANDAR LADDU THOKKUDU LADDU BESAN LADDU


Method:

  • Take a cup of Besan & mix it into thick paste with water to prepare murkulu
  • Take a pan, place it on stove, put sufficient oil & heat it
  • Keep the stove in medium after the oil is hot
  • Put thick besan paste in murkulu gottam & squeeze besan paste into oil to make murkulu
  • Fry the murkulu into crispy
  • Let the item be cooled
  • Put these murkhulu in mixie & grind into smooth powder
  • Take another pan & let it heat
  • Add 1 & ½ cup of sugar with 1 tea cup of water & melt  it till heavy bubbles are seen (Theega paakam)
  • Add illaichi powder & ½ cup of ghee in it
  • Mix it thoroughly & switch off the stove
  • Add murkhula powder & mix it thoroughly till it becomes thick paste**
  • Once it is thick, make that thick paste into big laddus
  • Thokkudu laddu is ready.

For better taste, we can add Kaaju in the mixture before making into laddus.

**When murkhulu powder is added in paakam, it has to be mixed thoroughly till it becomes thick paste. Else, it will become like liquid if it is not continuously mixed.
