Bamboo chicken is a chicken curry prepared by stuffing the bamboo shoot with the chicken and then cooked on charcoal. Bamboo chicken is an oil-free and nutritionally rich dish.

Preparation Steps of Bamboo Chicken


  1. Rinse chicken thoroughly and add into a bowl.
  2. Add turmeric powder, chili powder, coriander powser, garam masala and ginger garlic paste to the chicken and rub well. Also add 1 tablespoon of oil and lemon juice. Rub well and let it rest for 1 hour.
  3. Place a firewood on the ground or set up a barbeque station.
  4. Take the fresh cut green bamboo stem with one end closed with its node.
  5. Rince the inner part of the bamboo before making use of it in this dish.
  6. Fill 3/4th of the bamboo stem with the marinated chicken.
  7. Take banana leaves or other leaves like spinach and fill the remaining 1/4th part of the bamboo stem with it.
  8. Place the stuffed stems onto the fire and leave it for 45 minutes to 1 hour (depending on the heat).
  9. After cooking, take the bamboo carefully making sure that you don't burn yourself. rmove the leafy stuffs above the chicken.
  10. Take a serving plate and turn the bamboo upside down to remove all the chicken from within.
  11. Serve with coriander leaves and lemon wedges.
