Foods, both cooked or uncooked, that are stored for a certain time period to effect natural chemical changes are called Fermented Foods. A very famous fermented food in many parts of South India and across South East Asian countries is cooked rice soaked in water overnight. This is called 'Chaddi Annam' in Telugu language. Traditionally, Chaddi Annam served as first meal of the day for general popoulation in these regions before present breakfast varieties took over.

Earthern pots are to be used for best results. Soak leftover rice after dinner and leave it. Next morning, retain the water, add some dahi / yoghurt, mix well and eat it with fresh onion and/or green chillies. Else, you could drain the remaining water, and eat the fermented rice with curry or pickle / chutney. Fermented Rice or Chaddi Annam is much more fortified with nutrients in comparison to its earlier form, freshly cooked rice. Especially, the levels of iron and magnesium increase multifold.  It serves as an ideal first meal for a day filled with activities. Loaded with enery and nutrients yet easy on palate.
