Sandalwood is found extensively in India (Karnataka), Australia and Hawaii. Sandalwood grows in many parts of the world. Due to the difference in the region, each species of sandalwood varies from the other. These trees are prone to a lot of smuggling. This sandalwood sherbet is a traditional Indian drink. The sherbet is meant to be a thick and concentrated syrup rich with sandalwood flavour. The best garnish for the sandalwood sherbet is either fresh lime juice of lime slices.
Since lime juice is already a part of the sherbet, many may tend to add fresh cut mint leaves to it. Make sure to stir it well before drinking.

Preparation Steps of Sandalwood Sherbat


  1. Begin with boiling half cup of water in a pan.
  2. Add saffron to it.
  3. Turn off the heat and let the pan along with the saffron infused water rest until it cools down. The cooling down process is important because the flavour of the saffron intensifies more.
  4. Slowly crush the saffron in it with the help of a mortar and pestle.
  5. Heat 1 litre of water in a pan.
  6. Once it has reached a slow boil, add sugar and lemon juice to it.
  7. Cook this until the sugar dissolves and the syrup thickens (approximately 5 minutes on a high flame).
  8. Pass this syrup through a sieve and let it rest until it cools down. As the syrup cools, it tends to thicken a bit more. Hence, keep a constant eye on it.
  9. Once it has cooled down considerably and is just a little warm, add the sandalwood powder and the saffron water.
  10. This sherbet can now be transferred to clean bottles and stored in a cold place.

To serve:

In a glass, add crushed ice. Add 1 to 2 tablespoons of the cold sherbet onto the ice. Top it off with some cold water. Garnish it with either lemon slices or fresh mint leaves.
